Ingredients:

1 can coconut milk

1/3C quick cooking tapioca

3/4C soy milk (almond/rice should work well too)

1/4C maple syrup (I use agave)

pinch of salt

1/2 tsp Vanilla Extract

Directions:

1. Place all ingredients in a sauce pan and bring to a boil.  Watch you pan and stir occasionally.

2. Pour contents into desired container and stir in the vanilla extract.(I use an 8×8 glass container) Let it cool in the fridge.

3. Sprinkle lightly with cinnamon or top off with fresh cut berries.

Yummy!
